LENTIL AND WALNUT SALAD

Ingredients:
1 cup washed lentils
2 tblspns olive oil
1 tblspn red wine vinegar
ΒΌ cup fresh parsley, chopped
3 spring onions, finely sliced diagonally
1 cup walnuts, roughly chopped
2 cloves garlic, crushed
2 tspn Dijon mustard
Salt & pepper
Simmer lentils in enough water to cover until they are
tender. Drain well.
Combine oil, vinegar, garlic, mustard and salt & pepper and
stir through the lentils while they are still hot. Set aside to
cool, then add the remaining ingredients.
