Pancakes with Strawberry Sauce


For Pancakes:

1/2 cup whole wheat flour

1/2 cup all purpose flour

1 tablespoon sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/4 skim milk

1 teaspoon cooking oil

2 egg whites

Non stick spray coating

For Strawberry sauce:

2 cups fresh or thrawed frozen unsweetened strawberries

1 tablespoon sugar

1 teaspoon vanilla



In a mixing bowl, combine flours, baking pwder and salt. Stir in milk and oil. In another bowl, beat egg whites until stiff (tips stand straight). Fold egg whites into flour mixture.

Spray pan with non stick spray coating. Preheat the pan over a medium heat, For each pancake, pour about 1/4 cup batter onto the hot pan. Cook over medium heat until pancakes are goldne brown (1 to 2 minutes per side); turn to second side when pancakes have bubbly surfaces and slightly dry edges.

Strawberry sauce: In a blender or food processor combine the strawberries, sugar and vanilla; process until smooth. Heat sauce in a small saucepan until warm.

Serve pancakes with the sauce over the top.

Makes 5 servings (2 pancakes each)
