STUFFED CHICKEN BREAST

Ingredients:
4 chicken breasts
1 ½ cups grated cheddar or mozzarella cheese (or try
crumbled blue cheese for something extra special)
2 Packham pears, peeled and grated
½ onion, grated
2-3 handfuls quick oats (enough to bind cheese, pear &
onion)
1 tspn dried sage
Salt and pepper
Instructions
Pre-heat oven to 200oC.
Mix all ingredients, except chicken, into a doughy mixture.
Set aside.
Wipe chicken with kitchen paper. With a sharp knife, cut a
horizontal slit in each breast to create a pocket. Stuff the
pockets with cheese mixture.
Wrap each breast tightly in cooking foil. Place on oven tray
and bake for 15-20 minutes, until tender. Allow to stand for
5 minutes before unwrapping and serving.
